Hi friends. My weekly meal plan is typically a blog post on my WordPress blog, smartinthekitchen.com, but today it's coming at you in email form.
It's Sunday morning here in Houston, which is when I usually write my meal plan. However, I just logged into my blog to realize a security certificate expired yesterday so I can't post there until I get that fixed. Yep, the joys of technology. So helpful, such a headache. Basically, I just need to pay for another year of enhanced security for the backend of my blog, but until I do that I can't post on or link to the site. Yay!!! So instead, I'm sending my weekly meal plan in newsletter format.
You might not subscribe to my blog (it's free, lots of good stuff!) so if this is your first time receiving my meal plan, it's truly what I plan to cook for my family this week, with some tips and tidbits thrown in for good measure. I hope this helps you out. I have a few other important updates to share, so let's get to it!
First things first, the pre-sales for my FIRST COOKBOOK are live. Dinner is Done comes out November 1. When you purchase the cookbook through me, it will help me raise funds for the marketing and promotion of the book. SUNDAY
Please don't judge me. And honestly, I know you won't. Or at least I think you won't? But I'm serving my family Costco meatloaf and mashed potatoes for dinner. I grabbed it on impulse yesterday when purchasing Ring cameras for our house. I'll steam broccoli to serve on the side and drizzle it with lemon juice, extra-virgin olive oil and a pinch of flaky salt and red pepper flakes. I have a pile of paperwork and bills to wade through and loads of laundry to catch up on, so I'm excited about this "lazy Sunday dinner" plan.
MONDAY
I want something without meat to kick off the week, and I'm deciding between two options. Either a spinach and goat cheese frittata or a vegetable stir fry with Japanese eggplant. Let's go with the frittata and a big green salad. The good news is I already have all the ingredients for the frittata. Winning at life!
TUESDAY
We have a busy late afternoon today, so I need an Instant Pot dinner. Since I can't link any of my own blog recipes at the moment (URGH!), I'm going with Instant Pot Picadillo from SkinnyTaste. The recipe calls for ground beef, but I'm using ground turkey instead. Cuban-style black beans on the side warmed up on the stovetop with a squeeze of lime juice, cumin, paprika and salt. Microwave some pre-cooked 3-minute rice if you want! You can find pre-cooked rice in the freezer aisle of most grocery stores.
WEDNESDAY
We have a program for junior parents at our high school tonight, so it's another busy night. Tonight's appliance of choice is my slow cooker. Teriyaki chicken with a side of quick sautéd green beans (or any other veggie your family will eat).
THURSDAY
Oh my gosh you guys, when I just opened my calendar to see what we have going on Thursday I had nothing on my calendar. And I mean nothing. That never ever happens, so much so that I thought I had the wrong year or something. Don't worry, I have plenty to keep me busy! My husband's two requests for the week are Swedish meatballs or stuffed cabbage soup. Yes, I ask my family if they have any dinner requests for the week. No, I don't always fill their requests. But my people seem less likely to groan about what ends up on the table if I ask for their input. Stuffed cabbage soup it is! One pot is easier for the end of the week, and I don't care if it's still 90 degrees in Houston, every day is soup day in my book!
FRIDAY
I don't plan dinners for Fridays. I have two teenagers and I never know what plans will pop up at the last minute. It's usually a "come and take it" night where everyone heats up leftovers or my husband and I go out. If you need something quick and easy, make it a pizza night at home. Use a store-bought pre-made dough to make it simpler, or you know, just order delivery and put your feet up.
